INGREDIENTS
4 tbsps plain flour (all-purpose flour)
1 tsp ground turmeric
1 lemon, zested
Pinch of chilli flakes
Salt and pepper to taste
4 firm white fish fillets
Olive oil cooking spray
4 brioche buns, halved and toasted
4 tbsps mayonnaise
Handful of rocket (arugula) leaves
1 large beef tomato, sliced
½ white onion, thinly sliced
½ red chilli, deseeded and sliced
Coriander leaves (cilantro) and micro greens, to serve
METHOD
Preheat air fryer to 200°C (400°F).
Mix the flour, turmeric, lemon zest and chilli flakes on a large plate and season well with salt and pepper. Coat each piece of fish in the seasoned flour.
Spray air fryer basket with cooking spray. Arrange fish fillets in basket and spray each one with cooking spray.
Cook for 4Â minutes, then flip and spray once more. Cook for a further 4-6Â minutes until fish is cooked through.Â
Spread brioche bun bases with mayonnaise, then add rocket leaves and slices of tomato and top each with a fish fillet. Sprinkle with sliced onion, chilli, coriander and micro greens. Place the brioche bun tops on to serve.
