Traditional Southern Fried Chicken

INGREDIENTS

1kg (2lb) chicken pieces

¼ cup (60ml, 2fl oz) buttermilk

¾ cup (90g, 3oz) plain flour (all-purpose flour)

1 packet (75g, 3oz) coating mix for southern fried chicken

Salt and pepper to taste

Cooking spray

 

METHOD

Place the chicken in a large bowl. Drizzle over the buttermilk and toss to coat. Cover and transfer to the fridge for 1 hour minimum (longer is better).

When you are ready to cook the chicken, begin by combining the flour, chicken coating mix, salt and pepper in a large, shallow bowl. Stir and mix well.

Dredge the chicken in seasoning mix, ensuring that both sides are fully coated.

Spritz the air fryer basket with cooking spray.

Preheat the air fryer to 200°C (400°F).

Place the chicken in the air fryer, being careful not to overcrowd the basket. Cook in batches if necessary.

Cook for a total of 20 minutes on 190°C (375°F), flipping the chicken every 5 minutes.
