INGREDIENTS
4 apples
Juice of 1 lemon
¼ cup (20g, ¾ oz) toasted muesli
2 tbsps pepitas
2 tbsps chopped almonds
2 tbsps chopped cashews
2 tbsps sultanas
2 tsps cinnamon
1 tbsp brown sugar
4 tbsps butter, softened
METHOD
Using a small sharp knife, remove cores from apples, leaving apples whole and bases intact. Squeeze the lemon juice into the centre of the apples.
In a small bowl mix together the muesli, pepitas, almonds, cashews, sultanas, cinnamon and sugar.
Add butter and stir through.
Push the filling into the centre of the apples.
Place apples into an air fryer-safe pan and cook for 20 minutes at 175°C (350°F) until apples are soft.
