INGREDIENTS
4 x boneless pork chops, pounded to 1cm (½ in) thin pieces
100g (3½ oz) corn chips
¼ cup (25g, 1oz) Parmesan cheese, grated
1 cup (120g, 4oz) almond meal
1 tsp dried sage
Salt and pepper to taste
2 eggs, beaten
Olive oil cooking spray
METHOD
Place corn chips in a food processor and blitz to a fine crumb. Combine crumbs with Parmesan, almond meal, sage, salt and pepper in a shallow dish.
Place the beaten egg in another shallow dish.
Dip each piece of pork first into egg then into the crumb mixture and press gently to coat.
Preheat air fryer to 200°C (400°F).
Spray pork with cooking spray and place in air fryer. Cook for 12-14 minutes until cooked through, turning and spraying at 6 minutes.
