INGREDIENTS
¾ cup (90g, 3oz) almond meal
¼ cup (30g, 1oz) tapioca flour
2 tsps coconut sugar
1/8 tsp salt
75g cold butter, diced
2 eggs
2 apples, sliced
4 plums, sliced
Juice and zest from 1 orange
1 tbsp maple syrup
½ tsp vanilla extract
½ tsp cinnamon
2 tsps cornflour (cornstarch)
METHOD
In a food processor, combine almond meal, tapioca flour, coconut sugar, salt and butter and pulse until a breadcrumb consistency is reached.
Add one egg and pulse again until the dough comes together. Form into a flattened disc, wrap in plastic wrap and place in refrigerator for 30 minutes to chill.
Place apple and plum slices in a large bowl with orange juice and zest, maple syrup, vanilla, cinnamon and cornflour. Toss to coat.
Remove dough from fridge. Place dough between two sheets of greaseproof paper. Roll out to roughly 16cm in diameter. Remove top sheet of paper.
Add the fruit to the centre of the dough, leaving about 5cm (2in) around the edge. Fold the edges of the dough over the fruit to create the galette.
Beat the other egg and brush it over the dough.
Preheat the air fryer to 160°C (320°F). Use the bottom sheet of greaseproof paper to lift the galette into air fryer. Bake for 12-15 minutes until golden brown and cooked through.
Use the greaseproof paper to remove the galette from the air fryer and allow it to cool slightly before serving.
