Pineapple Loaf

INGREDIENTS

1¾ cups (225g, 8oz) self-raising flour

100g (3½ oz) butter

½ cup (100g, 3½ oz) caster sugar

1 x 230g pineapple chunks in juice

1 egg

2 tbsps milk

Loaf tin

 

METHOD

Preheat the air fryer to 200°C (400°F) and lightly spritz a loaf tin with non-stick spray.

Combine the flour and butter in a large mixing bowl. Rub mixture together with fingertips until it forms a crumble.

Next add the sugar, pineapple chunks and juice and stir well. Set aside.

Whisk the egg and milk together in a separate bowl.

Pour the egg liquid into the bowl with the other ingredients and stir with a wooden spoon until the mixture is fully combined.

Preheat the air fryer to 170°C (340°F).

Transfer the mixture to the prepared loaf tin and cook for 40 minutes.

Serves 6
