INGREDIENTS
1 cup (90g, 3oz) rolled oats
½ cup (80g, 3oz) uncooked quinoa, rinsed
3 tbsps chia seeds
¼ tsp salt
1 tsp cinnamon
1 large banana, mashed
½ tsp vanilla extract
½ cup (60g, 2oz) sunflower seeds
¼ cup (40g, 1½ oz) raisins
¼ cup (65g, 2oz) almond butter or tahini
2 tbsps honey or maple syrup
Cake tin, greased and lined
METHOD
In a large bowl, combine oats, quinoa, chia seeds, salt and cinnamon. Add banana and vanilla and stir well. Fold in sunflower seeds and raisins.
Place almond butter or tahini and honey or maple syrup in a small saucepan over low heat for 2‑3 minutes and stir until warm and well combined. Pour into granola bar mixture and mix well.
Preheat air fryer to 160°C (320°F).
Pour mixture into prepared tin and press down firmly. Place tin in the air fryer and cook for 20 minutes or until edges turn golden brown.
Allow to cool completely before cutting into bars.
