4 x 125g lobster tails
4 tbsps butter
1 tsp lemon zest
1 clove garlic, minced
Salt and pepper to taste
Lemon wedges to serve
Method
Use kitchen scissors to cut lengthways through the hard top lobster shells. Cut flesh in half and spread apart.
Melt butter in a small saucepan over medium heat. Add lemon zest and garlic and cook for 30 seconds until fragrant.
Pour half of the melted butter into a bowl and set aside.
Brush lobster tails with remaining lemon garlic butter. Season well with salt and pepper.
Cook lobster tails in air fryer at 195°C (380°F) for 5‑7 minutes until lobster meat is opaque.
Spoon reserved butter over lobster meat. Serve with lemon wedges.
