INGREDIENTS
½ cup (50g, 2oz) Parmesan cheese, grated
1 tsp garlic salt
1 tsp mixed herbs
½ cup (60g, 2oz) breadcrumbs
2 boneless chicken breasts, pounded to 3mm (1/8 in) thickness
2 eggs, beaten
Cooking spray
4 slices Swiss cheese
METHOD
Preheat the air fryer to 180°C (350°F).
Combine the Parmesan cheese, garlic salt, herbs and breadcrumbs in a shallow baking dish. Place the egg in a second shallow dish.
Dredge the chicken breasts in the beaten egg and shake off any excess. Then dredge through the cheese and breadcrumb mixture, pressing in with your fingers.
Spritz the air fryer basket with cooking spray.
Place the chicken breasts in the air fryer in an even layer.
Cook for 6 minutes, then remove from the air fryer. Turn over the chicken pieces and place two slices of cheese on top of each. Return to cook for a further 6 minutes.
