INGREDIENTS
Cooking spray
2 eggs
¾ cup (75g, 3oz) almond flour
¼ cup (40g, 1½ oz) ground flaxseed
1 tbsp black sesame seeds
1 tsp garlic powder
1 tsp salt
⅛ tsp pepper
2 large chicken breast, cut into slices
METHOD
Spritz the air fryer basket with cooking spray.
Whisk the eggs in a mixing bowl.
Place the flour, flaxseed, sesame seeds, garlic powder, salt and pepper in a second bowl and stir to combine.
Dip a slice of chicken into the egg mixture and shake off any excess. Then press into the flour mixture ensuring the chicken is well coated on all sides. Place on a plate. Repeat until all chicken is coated.
Preheat the air fryer to 200°C (400°F).
Transfer the chicken slices into the air fryer basket. (Be careful not to overcrowd the basket. Cook in batches or use a double layer accessory if needed.)
Cook for 20 minutes, turning once during cooking.
