INGREDIENTS
20 white button mushrooms
1 cup (125g, 4oz) breadcrumbs
¼ cup (25g, 1oz) Parmesan cheese, finely grated
½ tsp paprika
½ tsp salt
½ tsp pepper
2 eggs
3 cloves garlic, minced
½ cup (60g, 2oz) plain flour (all-purpose flour)
METHOD
Rub the mushrooms clean with a paper towel and pat dry with a fresh towel.
Combine the breadcrumbs, Parmesan, paprika, salt and pepper in a shallow bowl.
Beat the egg together with the minced garlic and place in a second shallow bowl.
Place the flour in a third bowl.
Dip each mushroom into the flour then through the egg mixture, shaking off any excess. Then press into the breadcrumb mixture, ensuring it is evenly and fully coated.
Lightly spritz the crumbed mushrooms with cooking spray.
Cook for 15 minutes on 190°C (375°F) until golden brown.
