INGREDIENTS
Ā½ cup (155g, 5oz) rice malt syrup or maple syrup
150g (5oz) mascarpone cheeseĀ
2 eggs
60g butter, melted
Zest of 1 orange
1 tsp vanilla extract
2/3 cup (80g, 3oz) plain flour (all-purpose flour)
1 tsp baking powder
2/3 cup (80g, 3oz) mixed berries

METHOD
Preheat air fryer to 180Ā°C (350Ā°F). Line loaf tin with greaseproof paper.
Combine syrup, mascarpone, eggs, butter, orange zest and vanilla in a large bowl. Mix well.
Add flour and baking powder and stir to combine.
Add berries and gently fold through.
Pour cake batter into prepared tin.
Place tin in air fryer and cook for 30ā35Ā minutes or until an inserted skewer comes out clean.
