INGREDIENTS
1 cup (125g, 4oz) breadcrumbs
¾ cup (75g, 3oz) Parmesan cheese, grated
Pinch of salt and pepper
1 egg
1 zucchini, thinly sliced
Skewer rack
METHOD
Preheat the air fryer to 180°C (350°F).
Combine the breadcrumbs, cheese, salt and pepper on a plate.
Lightly whisk the egg in a bowl.
Dip a zucchini slice into the beaten egg and then into breadcrumb mixture, pressing to coat. Place the zucchini slice on a skewer.
Repeat with more zucchini slices until you have filled the rack with slices, without any overlapping. Lightly spray zucchini slices with cooking spray.
Cook for 10 minutes. Flip with tongs. Cook for a further 2 minutes. Remove from air fryer.
Repeat with remaining zucchini slices.
