INGREDIENTS
2 medium zucchinis, grated
Salt and pepper to taste
½ cup (130g) cooked mashed potato
1 cup (175g, 6oz) corn kernels
2 tbsps chickpea flour
3 cloves garlic, minced
2 tbsps olive oil
METHOD
In a large bowl mix grated zucchini with a ½ teaspoon salt and leave for 15 minutes. Then place on a clean tea towel and twist to squeeze out excess liquid.
Combine zucchini, potato, corn, chickpea flour, garlic, salt and pepper in a mixing bowl. Mix well.
Use your hands to shape the mixture into patties. Brush each fritter with olive oil.
Preheat air fryer to 180°C (350°F).
Arrange fritters in one layer in air fryer basket. Cook in batches or use a double layer accessory if necessary. Cook for 8 minutes then flip and cook for a further 3-4 minutes until brown.
