INGREDIENTS
¾ cup (65g, 2oz) shredded coconut
½ cup (50g, 2oz) coconut flour
1 tsp salt
3 eggs, beaten
4 x 120g (4oz) firm white fish fillets (such as whiting)
Avocado or olive oil spray
METHOD
In one bowl mix together coconut, coconut flour and salt.
In another bowl place beaten eggs.
Dip fish fillets into beaten eggs and then into coconut mixture.
Spray air fryer basket with avocado or olive oil spray.
Place fish into air fryer basket and spray with oil spray.
Cook for 4 minutes at 200°C (400°F). Flip the fish and cook for another 4 minutes until fish is cooked and crust is golden brown.
