INGREDIENTS
1¾ cups (225g, 8oz) self-raising flour
1 tsp baking powder
¼ cup (50g, 2oz) caster sugar
¼ cup (50g, 2oz) brown sugar
½ cup (120ml) milk + 3 tbsps milk
70g butter, melted
1 egg

60g butter, melted
¼ cup (55g, 2oz) sugar
2 tsps ground cinnamon
METHOD
Preheat the air fryer to 180°C (350°F).
Combine the flour, baking powder, caster sugar and brown sugar in a large mixing bowl.
In a separate bowl whisk together the ½ cup milk, butter and egg. Pour the wet mixture into the dry ingredients and stir gently until just combined.
Roll dough out onto a floured surface to create a log shape. Slice into disks around 2cm (1in) thick. Use a small cookie cutter (or bottle lid) to remove a circle in the centre of the disk.
Line the air fryer basket with greaseproof paper. Place the doughnuts inside. (Be careful not to overcrowd the basket. Cook in batches or use a double-layer accessory if needed.) Cook for 15 minutes, until they spring back when lightly pressed.
Place the melted butter in a small bowl and the cinnamon and sugar in a shallow dish.
Brush the doughnuts with melted butter then dip in the cinnamon sugar and turn to coat evenly.
