Christmas Tree Brownies

INGREDIENTS

115g (4oz) unsalted butter

1 cup (220g) sugar

2 eggs

1 tsp vanilla extract

1/3 cup (35g, 1¼ oz) unsweetened cocoa powder

½ cup (60g, 2oz) plain flour (all-purpose flour) (use gluten-free if needed)

¼ tsp salt

¼ tsp baking powder

½ cup (80g, 3oz) chocolate chips (optional)

20 candy canes, handles removed

11/3 cups (200g, 7oz) icing sugar (powdered sugar)

2 tsps milk or cream + extra as needed

1 tsp vanilla

Sugar pearls, for decorating (optional)

 

METHOD

Preheat air fryer to 160°C (320°F).

Place the butter in a small saucepan over low-medium heat until fully melted. Take it off the heat and whisk in the sugar until well combined.

Add the eggs and vanilla, then whisk until smooth.

In a separate bowl sift together the cocoa powder, flour, salt and baking powder. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the chocolate chips, if using.

Lightly grease a brownie tin with cooking spray or oil. Pour in the batter and spread it out evenly.

Transfer to the basket of the air fryer and cook for 15-18 minutes or until the brownies are set around the edges and slightly firm to the touch in the centre.

Remove from the basket and tin and allow to cool. Cut the brownie into triangle shapes. Insert a candy cane into each brownie piece at the base of each triangle, to resemble a Christmas tree. 

Place the icing sugar, milk or cream and vanilla into a bowl and mix well to combine. For a runnier glaze, stir in half a teaspoon of milk, one at a time until desired consistency is reached.

Drizzle the icing over the brownie Christmas trees and decorate with sugar pearls immediately to help them stick to the icing.
