Chicken Potato Salad

INGREDIENTS

2 chicken breasts
4 tsps olive oil
Salt and pepper to taste
½ tsp garlic powder
1 tbsp thyme leaves
250g (9oz) potatoes, sliced
100g (3½ oz) baby spinach

Dressing

1 tbsp finely diced shallot or white onion
1 tbsp lemon juice
2 tbsps olive oil

 

METHOD

Brush the chicken breasts with 2 teaspoons of the olive oil. Sprinkle with salt, pepper, garlic powder and thyme leaves.

Place chicken in the air fryer basket. Cook at 180°C (350°F) for 8 minutes. Then flip over and cook for another 8-10 minutes until cooked through. Remove from air fryer and wrap in foil to keep warm.

Toss potato slices with remaining olive oil, salt and pepper. Place potatoes in air fryer basket and cook for 12 minutes at 180°C (350°F). Shake air fryer basket then cook potatoes at 200°C (400°F) for 5 minutes.

Slice chicken and serve in bowls with potatoes and spinach. Combine dressing ingredients and pour over chicken to serve.
