INGREDIENTS
1 cup (120g, 4oz) buckwheat flour
½ cup (80g, 3oz) coconut sugar
1/3 cup (80ml, 3fl oz) coconut oil, melted
2 tbsps water
1 tsp vanilla extract
½ tsp salt
½ tsp bicarbonate of soda (baking soda)
1 tsp apple cider vinegar
½ cup (80g, 3oz) raisins
½ cup (60g, 2oz) almonds, chopped
METHOD
In a large bowl, stir together buckwheat flour, coconut sugar, oil, water, vanilla, salt and bicarb (baking soda). Mix in vinegar.
Fold in raisins and almonds then form dough into a ball. Wrap in plastic wrap and refrigerate for 25 minutes.
Roll dough into 12 balls then press gently to flatten.
Cooking in batches if necessary, arrange biscuits in air fryer basket. Cook for 6-8 minutes at 160°C (320°F).
