INGREDIENTS
2½ cups (300g, 10oz) almond meal
½ cup (80g, 3oz) coconut sugar
1½ tsps gluten-free baking powder
¼ tsp salt
1/3 cup (80ml, 3fl oz) coconut oil or butter, melted
1/3 cup (80ml, 3fl oz) unsweetened almond milk
3 large eggs
½ tsp vanilla extract
¾ cup (75g, 3oz) blueberries
Muffin tray or silicone moulds
METHOD
Preheat air fryer to 180°C (350°F).
In a large bowl, stir together almond meal, sugar, baking powder and salt.
Mix in coconut oil or butter, almond milk, eggs and vanilla extract. Fold in blueberries.
Pour into silicone moulds or paper liners in muffin tray.
Working in batches, place in air fryer basket and cook for 15-20 minutes until an inserted skewer comes out clean.
