Banana Oat Pancakes

INGREDIENTS

1 cup (90g, 3oz) rolled oats

1 cup (250ml, 8flĀ oz) milk

1 tbsp unsalted butter, melted + more for cooking

2 large eggs

1 tbsp sugar

2/3 cup (80g, 3oz) plain flour (all-purpose flour)

2 tsps baking powder

Ā¼ tsp salt

Ā¼ tsp ground cinnamon

to serve

2 medium bananas, sliced

2/3 cup (160ml, 5flĀ oz) Greek yoghurt

Ā½ cup (50g, 2oz) frozen blueberries, warmed

2 tbsps flaked almonds

 

METHOD

Whisk oats and milk together in a large bowl. Let stand for 10Ā minutes for the oats to soften.Ā 

Add melted butter, eggs and sugar to the oats, and whisk to combine. Add flour, baking powder, salt and cinnamon and whisk until just combined.Ā 

Grease an air fryer safe pan with butter. Pour a ladleful of mixture into pan.

Cook for 5 -7 minutes at 165Ā°C (330Ā°F) until golden brown.Ā 

Remove from the pan with a spatula and keep warm. Repeat with the remaining mixture.

Serve with sliced banana, yoghurt, blueberries and flaked almonds or other toppings as desired.
