Artichokes Gratin

INGREDIENTS

1 x 280g (10oz) jar artichoke hearts, drained

2 tsps lemon juice

1 clove garlic, minced

Salt and pepper to taste

¼ cup (30g, 1oz) Cheddar cheese, grated

25g goat’s cheese, crumbled

¼ cup (25g, 1oz) Parmesan cheese, grated

¼ cup (60g, 2oz) mayonnaise

2 tbsps flaked almonds

1 tsp fresh parsley, finely chopped

 

METHOD

Baking pan

Place artichokes in a large bowl with lemon juice, garlic, salt and pepper. Toss gently to coat.

In another bowl combine cheeses and mayonnaise.

Arrange artichokes in baking pan. Spoon over cheese mixture. Place dish in air fryer.

Cook for 10 minutes at 170°C (340°F). Sprinkle with almonds and cook 2 minutes more. Sprinkle with parsley to serve.
