Air Fryer Pot Roast

INGREDIENTS

1 tbsp rosemary, chopped

½ onion, finely chopped

3 tbsps olive oil

1 tbsp balsamic vinegar

1 tsp salt

½ tsp pepper

1.2kg (4lb) (2½ lb) beef chuck roast, thawed

 

METHOD

Place the rosemary, onion, olive oil, vinegar, salt and pepper in a small bowl and whisk to combine.

Pour the mixture over the roast, cover and transfer to the fridge to marinate for 8 hours.

Preheat the air fryer to 200°C (400°F).

Place roast in the air fryer basket.

Cook for 30 minutes, flipping roast halfway through.

Allow to rest for at least 5 minutes.

Slice into thick cuts to serve.
